Mommy's Molasses Morsels! (a delicious recipe for a soft molasses cookie your whole family will love)

This particular recipe took quite a few tries to get it right. If you like a hard molasses cookie...please google again and try something else. This is definitely the recipe for those who love a chewey (ie: soft) molasses cookie.

Ingredients:

1 cup packed brown sugar (the cookie pictured was baked using regular brown sugar, but in general we preferred the flavor of dark brown sugar)

3/4 cup high quality lard

1/4 cup organic molasses

1 egg (we used a large farm fresh egg from a local farmer - you may need to use 2 eggs if you purchase the smaller store bought variety)

2 1/4 cups whole wheat flour

2 teaspoons baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

***3 tablespoons granulated sugar (for topping...do not mix with other ingredients)

Directions:

Preheat oven to 340F. Mix brown sugar, lard, molasses & egg. Once well mixed, add remaining ingredients.

Shape dough using a rounded teaspoon. Dip tops in granulated sugar. Place on parchment paper 2 inches apart on your cookie sheet.

Bake for 13 minutes, remove, & let cool.
