Taco Bake / Tacos in a Pan

Like tacos? Looking for an easy way to make tacos for your family?
Try this:

Grease a 9x13 pan

Preheat oven to 350F

Roll out 2 cans of crescent rolls and spread them on the bottom & up the sides of the pan. Smoosh the seams together to form a crust.

Crush 2C tortilla chips and layer evenly over the crust.

Fry up 2lbs ground beef, add taco seasoning and salsa or tomato paste (do it however you usually do for tacos - we make ours from scratch - but feel free to use package taco seasoning)

Spread the beef mixture over the crust.

Spread 2C sour cream over the beef.

Spread 3C corn over the sour cream.

Spread 2C black beans or refried beans over the sour cream.

Spread 3C Spanish rice over the beans.

Sprinkle 3C shredded cheese (you choose the flavor) over the rice.

Crumble 1C tortilla chips over the cheese.

Bake for 38 minutes at 350F

Serve with diced tomatoes, shredded lettuce, black olives, diced onions, guacamole, sour cream, salsa, tortilla chips, taco sauce, hot sauce, etc

Basic Shopping List:

2 packages Crescent Rolls (generic or store brand is fine)
1 bag tortilla chips (you'll have leftovers, and yes...Doritos taste wonderful too)
2 lbs ground beef (ground turkey is fine if you prefer)
2 C sour cream (light or fat free works just as well)
2 C corn (garden fresh, frozen, or canned works the same)
2 C black or refried beans
3 C spanish rice (the package mix is fine - or make your own using your favorite recipe)
3 C shredded cheese (pre-shredded, home shredded, taco flavored, sharp cheddar...whatever floats your boat)

Extras you may want to buy:

Lettuce (shredded or a head to chop)
black olives
taco sauce
salsa
onions
red peppers
green peppers
cilantro

*****we have a child who doesn't like onions, so you'll notice they are omitted from the recipe. My husband will assure you this recipe would be MUCH tastier with onions. Please personalize this dish to suit the needs of your family.

ENJOY!!!!

May your paths be abundantly filled with lemons, sugar, sunshine, and large pans of food to share with those you love!

You Can Speak Your Mind, But Not On My Time?

Today's post title is inspired by the fabulous song that is likely going through your head right now "I still belong, don't get me wrong, you can speak your mind but not on my time...you can live your life, but this is my life..."etc... The topic however is inspired by a dear friend who recently said to me "why is it so hard for people to be real and have a conversation about things they disagree with?" I've been thinking about that queestion and the conversation that it inspired - what she was really talking about is feedback. Why is it so difficult to tell someone that you'd like them to do something differently? We beat around the bush, and sometimes never say what's on our mind. Isn't this really the rooot cause of relationship problems? The cause of dating mis-haps, family arguements, and the underlying issue that often results in anger and fighting? Before you answer, let me toss out some scenarios: 1) You're dating someone ...

Natural Remedies for Depression ?

Have you had those moments when you weren't feeling quite like yourself? Those negative thoughts were creeping in? clouding your judgment? making every day chores seem like amazing feats of heroism? If you've never felt like that - good for you! I on the other hand struggle with life's ups and downs. From depression during my divorce to post-partum depression, etc... I tend to be a very happy and optimistic person, but the flip side of that coin brings those days when staying in bed is more alluring than hopping in the shower and going through the motions of the day. There are some fabulous medications on the market today, and seeking the help of a healthcare professional is always a great idea. Sometimes I'm not feeling depressed, but I fear I'm headed there. I don't particularly care for some of the side effects of medications I have been on in the past, and a natural remedy can sometimes give me just the kick in the pants that I need to 'get happy...
